Made a first swing at the chipotle enchilada sauce last night.  It's in the ballpark but not quite right.  One of the things I love about Trudy's is that there's actually a decent amount of tomato in it, alongside the chiles, and it rounds out the flavor really nicely.  Most restaurants' chipotle sauce ends up being too chile-y for lack of a better word.  But, I think I used too much tomato for this batch, and need to dial it back.  Even so, it's tasty as a salsa for chips.

That's the final weekend of Spring Break, we'll be out of town until Monday the 24th.  Maybe I'll leave something for you on the front porch :)

Second batch of sauce nailed it, I really just upped the chipotle content.  And my pecan-smoked chicken was perfect.  I definitely won, of course, although my nephew's wild boar with chile con carne was quite good, and my dad's standard stacked West Texas enchiladas with red chimayo gravy and fried eggs on top, were as good as always.
