Man, that looks good. The tots look as good as the burger. I’d need a big bowl of ketchup for those bad boys.
Gotta give my wife the credit for the tots, as well as the assembly of the burger. I just ground the meat, cooked the burgers, and toasted the buns. She did everything else. 

There is a ketchup shortage, apparently.

Is ketchup made in China too?
I don't like ketchup much. Kinda grew out of it. 

Trying to ruin that burger with too much lettuce
I'm a big fan of balance. And when you have a 10.5 oz patty with two slices of melted cheddar, there's plenty of room to add condiments and still balance.

Totchos are a bar food popular here, the place next door claims to have invented them.  They have 4-5 versions for $10, which will fill up two people.

Totchos are based on tater tots fried and then covered with coverage, like nachos.

I do that all the time. We buy the nice big ones (I think U10) from the frozen section. Usually a 2.5# bag, so we'll typically do 1.25# per meal that we have scallops. I do the same with the frozen U13-15 shrimp, which comes in 4# bags. Costco has nice frozen individually-sealed portions salmon, mahi, cod, tilapia (for fish tacos) that we buy all the time. Usually don't get much of the halibut, sea bass, or others because they're $$$...

I rarely buy "fresh" seafood, because most seafood in the store isn't fresh anyway. It's previously frozen and defrosted in-store. Might as well buy it frozen and defrost it myself under my own conditions just prior to cooking. The primary time I buy fresh is when it's something that isn't available frozen from Costco, or when I'm buying the large 3+# salmon filet to make with the kids, because that will all be consumed in one meal.

They also sell a variety pack that has shrimp, calamari, scallops, and mussels. Defrost that, toss in corn starch, then fry makes for a nice appetizer if you have people over.

Actually had this for the first time at Cold Bell and Cheeseburgers last week. A Buffalo Chicken variety.  They were quite tasty.  Wife just recently had braces put on so Nacho chips are out of the question.

The last third of loaded tots are far superior to the soggy chips of loaded nachos.  

But you have to gobble both up before either gets cold.
